Meatless Monday

Despite having been vegan for years in college, the idea of (simply?) going vegetarian totally scares me.  I’m so dependent on fish, chicken, ground turkey, and the occasional red meat for my protein, and just can’t wrap my head around the alternative.  However, it’s hard to ignore the growing acceptance of ideas around meat and health; meat and the environment; meat and morals.  And so, to a very lukewarm audience, I proposed one day a week – no meat.

This post marks three hours in, and it’s amazing how conscious I’ve already had to be about the effort.  I replaced the turkey bacon that usually complements my eggs with grapefruit, and leftover homemade gluten-free pizza will make a great lunch (I loooove pizza stones), but how do we do this dinner thing?

I KNOW you have some good ideas…

PS. In other news, you’ll be glad to know I had all kinds of school-free fun this weekend.  Seahawks, good beer, good run, bike ride, beach, Costco (yes, it had been long enough it was actually fun), QT with Meg, and I magically became a little more blonde…
