What is brining anyway?

Second T-Day turkey I’ve ever cooked goes in the oven in an hour or so.  I’m so looking forward to our tiny and cozy day of thanks.  Thankful I didn’t have to travel (sorry, dad), thankful for a few days of rest, thankful for my family and friends and my honey, for my little doggy, for the chance to be in grad school, for my job and my health.  Thankful for it all.  And a pre-emptive “thanks” for my my dishes not burning, overcooking, undercooking or just plane going wrong…please?
